Hey Girl...

If you've been following along, you know that I lost about 10 pounds doing a DietBet challenge with some other Philadelphia area bloggers.  I was hoping to lose close to the same amount again this past month, but I didn't meet my goal (insert whining sound here.) I still lost another 4 pounds, which is something to be proud of, but I didn't work to my potential which is frustrating.

Now, it's the beginning of April which means there is still about 2 months before pool & beach season begins in the Northeastern U.S.  Although I am aiming to lose at least another 10 pounds before summer, I also must be happy with what I have today.

In honor of Operation Beautiful, which is a wonderful campaign to remind women stay positive and end 'negative self-talk'. I want to remind you today...

Healthy Snack: Crunchy Roasted Chickpeas

I love trying new foods, so when a friend offered me a roasted chickpea, I popped one in my mouth. Mmmmmm. Crunchy. Yummy.

The taste almost reminded me of fried chicken. I know it sounds weird, but these little roasted beans were good. Since I've tried them at her house, I've made two batches of my own. The first batch was neglected because I was multi-tasking and I over cooked them.  But, the second batch tasted just right.

Now, today, I want to share the recipe for roasted chick peas. They're all natural, pretty healthy, and they satisfy that crunchy, salty craving.

 You only need 3 ingredients:

  • 1 can of Chickpeas (Garbanzo Beans)
  • 1.5 tablespoon of Olive Oil
  • 1 teaspoon Goya Adobo Seasoning

Nature Walk: Looking For Signs of Spring With Kids

It is my pleasure to introduce you to today's guest blogger, Barb, from A Life in Balance. You can usually find Barb blogging about life, food, local finds, frugal living and everything in between. Today, she shares the many ways we can connect with our children and nature as spring blooms all around us. 

One of our favorite family activities which has grown out of our time as a homeschooling family is taking nature walks. These types of walks work well with a range of ages since even ittle ones can learn about the natural world around them by looking for animals like squirrels or chipmunks or by identifying the more common wildflowers and trees in their area.

To get started, try taking walks in the different habits in your area. For example, our hometown area, the Delaware Valley, is home to a fresh water marsh, salt water marsh, meadows, mountains, and woods. The fresh water marsh is the source for walks throughout the year since it serves as a stopping point for birds migrating in the spring and fall. The other spots can be visited seasonally to see what changes have occurred.
Toddlers can look for leaf buds, common birds, or the first flowers.  Preschoolers can be introduced to the concept of seasons. They can also begin to differentiate between the different types of environments.

Elementary students and up can use nature journals to help them hone in on details in the environments such as leaf shapes, different types of birds, and wildflowers. They're ready to understand concepts like the cycle and the roles the different members of the environments play. Elementary students can also learn about recycling and how to preserve the environment for others.

Ways to Extend the Walk:

  •  Make small file folder books to use as nature journals for each walk. 
  • Start a regular nature journal with a sketch book from an art store.
  • Learn bird calls for your area. Petersen's Birding by CD is one resource our family has used.
  • Have a visual scavenger hunt. Print out pictures of birds, flowers, or trees to look for and have the kids match them up with the pictures.
  • Do leaf rubbings. 
  • Learn about animal tracks and make plaster casts of tracks you find. 
  • Take a walk at night and listen to the sounds of the nocturnal birds and animals. 
  • Buy your children disposable cameras if they're young or lend them your camera if they're old enough and take pictures of what they see. If you focus on a theme each time like documenting all the wildflowers you find, children are more likely to stay focused on the task. At the end of the year, combine all the photos into a book which could serve as a reference for future walks

So what did my family think of Over the Moon Milk? 

We were impressed.  Not only was their low fat milk delicious, but it has more calcium, protein and less fat that other brands. I was also happy to see that their Chocolate Milk has 45% More Calcium and 37% More Protein per serving than reduced fat chocolate milk. Over the Moon chocolate milk  is rich and creamy, yet it contains 0g fat and no high fructose corn syrup. It seems like common sense to leave out high fructose corn syrup from a popular kids drink, however not all brands are as thoughtful as Over the Moon. This was really nice to see.

When I see my sons' passion for sports, it makes me come alive. My 6-year is constantly surprising me with his athletic accomplishments and my 4-year old seems to be following in his footsteps. Today, my 4-year old tried on his brand new white baseball pants and we practiced throwing the baseball back and forth to each other.  At one point, I looked at him and said, "You haven't even had your first game yet, and you already have grass stains all over your pants."  He looked up at me and firmly said "That's what baseball is all about."  He was 100% right.

Easy Recipe: No Bake Cookie Butter Bars

If you would have asked me a month ago what Cookie Butter was, I would have said "I have no idea." And, if you would have told me that I would be creating my own yummy new recipe using Cookie Butter I probably would have laughed at you.

Cookie Butter is a little hard to explain.  In a nutshell, it's a creamy spread that looks just like peanut butter, however, it is actually made with speculoos cookies, and it's totally nut free. Imagine the texture of peanut butter but the taste of cookies.

Here's the recipe for these Easy No Bake Cookie Butter Bars: 

  • 4 cups of Whole Pitted Dates
  • 2 cups of Raw or Toasted Almonds
  • 1/2 cup of Chocolate Chips or your Favorite Chocolate Bar
  • 4 tablespoons of Trader Joe's Speculoos Cookie Butter (can be substituted with Peanut butter)

It's hard to believe that it's almost April! Where did the time go, and more importantly, where did winter go? The colder months always seemed to go by slower for me, but not this year. But hey, you don't see me complaining. Now that it is the end of March, it's time to start thinking about Easter! Easter was always a fun holiday for my family and I. We usually all gathered at my aunt's house for dinner and the traditional egg hunt. But now that we are all grown up, it's obvious we are much too old for that. I think the youngest one in our extended family is turning 18 this year! Like I said, time flies!

My favorite thing as a child was going into the dining room on Easter morning to find my easter basket. The “Easter bunny” always did a great job with choosing the best goodies to put inside of it. My favorites like Reeses and a white chocolate bunny were always included. And who could forget the peeps?! No easter basket is complete without some
peeps. 

I was thinking about my best friend Haley the other day. Haley just gave birth to a baby girl last year. I was thinking it might be nice to order her baby girl Nadia an Easter gift basket. Since Haley lives in South Carolina, I cannot deliver this basket myself. I knew there must be a way somehow that I could get this gift to her. Luckily, in my searches, I came upon a website that would allow me to order a gift basket in advance and have it delivered to her on time.

How To Calculate The Cost Of A Road Trip

Hello! I just saw something really cool on Pinterest, via Sandra Foyt @Albany Kid and I had to share this with you.

Did you know there is a site where you can quickly estimate how much it will cost to drive from one location to another? It's called CostToDrive.com. You just enter in your start and end location as well as the year, make and model of your car. Voila! In seconds it tells you how many miles your journey is, about how much money it costs for gas, and your carbon footprint too.

For mathematically challenged people, like myself, I think this is pretty cool. Also, it's really interesting to compare two cars for the same road trip. For instance, the site says that a trip from New York to Los Angeles costs $346 in a Hummer H3 and $111 in a Toyota Prius. That's over 3x the amount of gas!

Easy Cowboy Caviar Recipe

Spring is officially here, and we're getting a sneak peak at summer too.

You know those days in the summer when it's just too hot to cook? You want to throw some food on the grill and not even think about turning on your oven. For days like those, 'Cowboy Caviar' is the perfect summer side dish. My sister doubled this recipe for a recent party, and it was such a hit!

Here are the ingredients:

2 tablespoons red wine vinegar
1 1/2 teaspoons Olive or Canola Oil
1 clove garlic, minced
1/8 teaspoon pepper
1 Avocado
1 15 oz. can Black Beans
1 11 oz. Can of Corn
2/3 cup thinly sliced green or red Onion
2/3 cup chopped fresh cilantro (optional)
1/2 pound Roma tomatoes, coarsely chopped

Just mix it all up. Chill before serving and enjoy!

Happy St. Patrick's Day: Celebrate With a Full Irish Breakfast

Happy St. Patrick's Day! My six year old just learned the saying "Top o' the morning to you!", and I have a feeling we're going to be hearing that a lot today.

Will you be having an Irish breakfast this weekend? Here's a photo of an Irish/English breakfast that we recently made, but it's missing a few ingredients.  A typical full Irish breakfast includes Fried Eggs, Irish Bacon, Bangers (Sausages), Black & White Pudding, Fried Tomatoes, Mushrooms, Baked Beans, and Bread.

If you live near a Costco, you might want to see if they still have real Irish Bangers in stock. Real bangers aren't easy to find around here, so my husband was happy to get his hands on these. {Thanks to my mom for the tip.} We still haven't found a good spot in the Philadelphia area to buy Irish/English bacon, so if you know of a good place, let me know.

Easy No Recipe Needed: Marshmallow Peeps Pops

Every time I go grocery shopping with my husband and kids, I always get to the counter and see some desserts or treats that were thown in the cart when I wasn't looking. Our most recent trip to the store resulted in way too much chocolate and marshmallow peeps. This is not what a girl on a diet wants to see.  So instead of thinking about eating all of this stuff, I saw the peeps knew exactly what I wanted to do with them.  Peeps are cool to begin with, but, any food gets better when you put it on a stick.

To make these, you'll need:

  • Wooden BBQ skewers
  • Peeps
  • Ribbon
  • Wilton Treat Bags

I think these would look great in an Easter basket or as an adorable party favor for an Spring get-together or baby shower.  These are so quick, easy and inexpensive to make. 

Don't you love crafts or recipes that don't even need instructions?

The only little tip I can give you is: don't get worried if the peeps look separated or loose when you first put them on the stick.  As soon as you slide them into the treat bag and secure it with the twist tie they will tighten up. Adding a pretty ribbon makes it all come together!

Healthy Party Food Ideas & Wegman's Catering

What do you think of when you hear the phrase "party food?"

A few of the things that pop into my head are: meatballs, potato salad, deli trays, pasta salad, and spinach dip. These are all things I enjoy eating, but the calories can add up quick! So, I was pleasantly surprised with the party trays at my nephew's recent birthday party. My sister used Wegman's for most of the catering, and the food was healthy and delicious!

Oh the sushi! I don't know why sushi isn't a staple of every party. My six year old and I love to have little lunch dates where we share sushi together. My husband and little guy don't share this passion, so when my 6 year old and I have a chance to share sushi together, it's always special. We were both excited to see the sushi tray at the party!

In the winter, we don't grill very often, so seeing this colorful tray of grilled veggies made my mouth water. I was trying to stay away from the pasta salad, potato salad and bread, so I ate some of this instead. The grilled carrots before were even delicious. Yum. Yum. Yum. 

There was also a gorgeous fresh veggie tray from Wegman's. My mom made a pasta salad similar to one I made last summer, which was a Greek inspired orzo salad with spinach, tomatoes, olive and fresh oregano. Last, but not least, my sister baked a batch of healthy brownies (a.k.a. black bean brownies). My little guy absolutely LOVES these, and, I still have not met a child that didn't like these brownies!
