Easter Brownie Bites with Jet Puffed Bunny Marshmallows

Q: What do you get when you make mini brownie bites and add some bunny marshmallows? 

A: An easy to make & delicious treat that your friends and family will love. 

I found these Jet-Puffed Bunny Marshmallows in the supermarket.  They are in little bunny shapes and lighted tinted in pastel colors that are perfect for Spring and Easter. My kids love any type of marshmallow, so I knew these would be a hit!

For these Easter Brownie Bites, you can use any type of Brownie mix you want, or make the healthy version that I made here

If you read my previous post about the black bean brownies and thought it was gross, I dare you to try it ONE time.  I would bet that everyone in your house loves them and not a single person would ever guess what the secret ingredient is.  But, you can always stick with your favorite brownie recipe too.  I was skeptical too, so I understand.

Here's how to make these easy, yummy Easter treats... 

Just use a mini-muffin tin to make your brownie bites.  Then, as soon as you get the brownies bites out of the oven, firmly press a bunny marshmallow onto each one.  They should be hot enough to melt the very bottom of the marshmallow onto the brownie, but still keep the marshmallow in tact.

Then, let them cool and you're done!  See... I told you this would be easy.  I recently made these and everyone loved them.  I don't know what they loved more, the mini brownies, the bunny marshmallows or the combination of the two.  But, whatever it was, it did the trick!

Go Back Up Your Hard Drive Right Now.  Seriously!  - 3KidsandUs has survived the loss of irreplaceable photos, videos, memories, etc., not once, but twice!  In this post she hopes to spare anyone else going through this experience and offers extremely valuable advice regarding the importance of backing up your hard drive on an external hard drive--on a regular basis.  Unfortunately she learned just how crucial this is---the hard way.

A letter to Obama - Mile High Mamas have an article about a local mom who took action when she saw her son's class trip might be affected by the looming government shut down.  She knew how hard her son and his classmates had worked over the year to make this trip happen and she couldn't sit by idly.  Find out what happens when she decides to send a letter straight to President Obama!

  When Your Daughter is Afraid of a Butterfly - Go West Young Mom has a post about what to do when your preschooler is suddenly afraid of everything--particularly if the list of fears happens to include something that you're afraid of too.  Unfortunately, this issue comes up a lot in our household.  I am terrified by spiders, and most things that move quickly and have many legs---those thousand-legger things seriously creep me out.  I try my best to keep these fears to myself, but some encounters are definitely more challenging than others.  Multiple times I have screamed out loud when surprised by a thousand legger scurrying across the floor when I move something or a spider in the bathroom.  When I see my kids worried faces and hear them yell "What happened?" I instantly feel terrible and try to make up lame explanations..."Everything's fine....no big deal, just an interesting bug.  Bugs aren't scary guys...mommy was just surprised to see one...now go get daddy, k?

10 Disney Tips on Everything from Toy Story Mania, Epcot, PhotoPass & More!

This post, and the excellent photographs that go along with it, are courtesy of my friend Jen.  She was nice enough to give me valuable tips for my trip to Disney World in Florida, which I am excited to test out! Jen and her family go on magical Disney vacations twice a year, so she really knows what she's talking about!

I wish I could click my heels 3 times and go to Disney World RIGHT NOW! But, since I can’t, I would love to share some tips for anyone who may be heading there soon.

1) If you’re planning on going to Hollywood Studios here are important tips to keep in mind: You need to get there in the morning when they open - fast passes for Toy Story Mania are GONE by 10 or 11!  And, if you have a Star Wars lover in your house, you won’t want to miss Jedi Training Academy.  But you have to get over there first thing, and register for a show time - that fills up quick too!   As soon as we get to the park, we usually go straight to Jedi to sign up, then right over to Toy Story to get fast passes.  When that’s done, go off to enjoy the park.

2) You'll definitely want to take advantage of 'Child Swap'.  According to the Disney Family website, "The rider swap allows one adult member of your party to wait with the child who is too small to ride, while the rest of your party experiences the attraction. When your party is finished riding, the person waiting with the child is allowed to ride the attraction without waiting in line, and they can take up to three other people with them."  You can read the rest of the details here.  But, this is a great feature for families of small children.

3) Don’t forget that rain ponchos can be found at the dollar store in 2 packs!  But, if you’re like me, and plan on going to Disney World often, it is worth it to buy the Disney ponchos in the theme park.  I bought ours a while ago and re-used them on every trip. They hold up well and I like wearing them on water rides to stay a little drier.

4) I carry a bunch of fruit snacks and dum-dum lollipops with me. The lollipops are perfect on the plane for kids who are too small for gum.  The fruit snacks help curb the kids’ cravings for the candy that they see all over the theme parks.  

5) At Epcot, inside The Land....The Seed Tour was a little pricey and 45 min but all 3 kids LOVED it.  My kids were about ages 2, 4, and 7 at the time. It was very educational and they released ladybugs into the greenhouse at the end.

6)  At the Magic Kingdom, you might want to ride the train (right at Main Street) over to Frontierville first thing in the morning.  We have done that before and seemed to stay ahead of the crowds all day.

7) Take advantage of the little street shows. Even if the weather is crappy, the cast members make things fun!

8) If you're one of those moms who gets home from vacation and realizes that you're not in any of the photos, then you'll want to look into Disney's PhotoPass. Disney has photographers scattered everywhere throughout their parks.  I found that the photo pass was really helpful to have. They grab good shots of all the characters and some pretty nighttime family shots too. It’s the only we get photos of our entire family.

9) Ohana at the Polynesian is our favorite breakfast.  It's a character breakfast with Lilo & Stitch and my whole family loves it!

9)  My personal goal is to grab an adult beverage in every county in Epcot!  I've gotten close..... : ) And, I highly recommend the Woodpecker cider at the Rose Crown Pub.

Close to My Heart: Newborn Baby Pictures

When I saw these photos, I was speechless.  In my opinion, these are some of the most beautiful baby pictures I have ever seen.  Yes, I am biased, because the baby is my new nephew, and my sister shot these gorgeous photographs. But, I had to share them with you.

Something nobody told me about potty training

I've been a Mom for over 5 years and it still ceases to amaze me how many things I don't know about children and parenting.  No matter how in-the-know I think I am, I will be the first to admit that there is still so much I need to learn.  But, every now and then, something happens when you think... Really??? How could I never have heard about this before???

So, let's talk about potty training.  There are so many different approaches to getting on the potty train.  For both of my boys, I started by putting them on the potty before bath-time, which was the first little introduction to using the toilet.  Also, if the weather is nice and we we're playing outside, I would let them pee on a tree or bush in our yard where no one could see.  If you are a parent to boys, you've probably done this before too.  It seems harmless and the kids LOVE it! 

You know how some kids don't want to take a break from playing to use the potty.  They are much more likely to go outside vs. coming inside to use the potty.  And for now, that's fine with me. 

But, the other day, when I wasn't looking, my little guy actually did a #2 outside.  Oh, yes he did!  I am usually watching my kids like a hawk.  But, any parent understands that it only takes a minute for your kid to get into something or do something when you're not watching.  He was so proud of himself.  With his little pants around his ankles, and a big smile on his face, he looked up and said "Mommy I pooped."  It was in the same spot where I always let him pee.  I never actually told him he could ONLY pee outside.  So, this probably seemed like a great idea to a little kid.  And, it's not like he's going in his pants, because that would be yucky to a child who's already almost 100% potty trained.

Not that it's the biggest deal, but I can't believe I've never heard that this could happen when you teach your little boys that it's okay to pee outside.  It probably makes perfect sense to a small child. When you gotta go, you gotta go.  Right? So, to all you Mommies out there, don't say nobody ever told you about this potential potty hazard.  Now you know. ; )

Easy Grilled Citrus Chicken Marinade Recipe

I'm a mom on a mission.  Like almost every Mom I know, I'm always looking for easy dinner recipes that will satisfy my entire family. My kids have their fair share of chicken nuggets and pizza, but I don't want to be restricted to traditional 'kid-friendly' foods.  

I know kids can be picky.  But, I'm on a mission to broaden my kids' palettesand let them experience all types of food.

This is a simple marinade that can be used to grill chicken on the BBQ, or you can also use a grill pan on your stove top.  You might think that a recipe with Sherry is not kid-friendly.  But, the oranges add such a nice sweet taste that your kids won't even realize there's an 'adult' ingredient in there.  Not only do my husband and I love this recipe, but my kids love it too. 

It is so simple.  Here's how to whip up this easy marinade:

8-10 Chicken Thighs

1 Cup of Sherry - You may need to make a trip to the liquor store for this, but it's worth it

3 small oranges - It doesn't matter what variety

2 tablespoons of dried or fresh Rosemary - If you're using dried, crumble it in your hands, and if you're using fresh, make sure you chop it finely.

3 tablespoons on minced Garlic

  1. Get a gallon size Zip loc baggie.  
  2. Clean your Chicken thighs and remove the skin
  3. Put the Chicken into the Zip Loc Bag
  4. Wash the Oranges, then cut them in half and squeeze the juice of all 3 Oranges into the Zip loc bag.
  5. Then add the Garlic, Rosemary and Sherry to the bag.
  6. Seal the bag tightly and smoosh everything around until the chicken is evenly covered.  Marinate this in the refrigerator for about an hour.
  7. Remove the chicken from marinade and discard any remaining marinade. Grill the chicken on a pre-heated grill until it has reached an internal temperature of 165 degrees F (75 degrees C), and is firm and opaque, about 12 minutes per side.
  8.  

The sherry makes it fun and the oranges make it kid-friendly.  Your kids can even help you put the ingredients for the marinade into the Zip Loc bag.  Also, it's a pretty low calorie recipe, so it would be ideal for somebody on Weight Watchers or any other diet.  If you try it, let me know what you think.  

Saving Money at Disney World - For Moms of Preschoolers (and Big Kids too)!

So, our big Disney vacation is soon approaching - Woohoo!  I already know we are going to spends lots of money at Disney World and buy things we wouldn't normally indulge on.  That's a given.  However, the thrifty side of me really wants to be prepared as much as possible to cut down on our expenses.

I've been to Disney World so many times as a child and this is my third visit back since I've had kids.  Here are some of the things I've gotten before the big trip to help save us money:

I love browsing the Disney Store website. When I saw a good sale, I bought each of my sons a monogrammed fleece pull-over for a less than $15.00 each (including the personalization), and some Minnie ears for only $4.99.  I know I'd never be able to get them personalized sweat shirts this inexpensively once we're in the park.  So, I am really excited about this.  I could have saved even more money if I remembered to use EbatesRight now, Ebates is giving 5% cash back rebates on all of your Disney Store purchases made through them.  If you plan on buying from the Disney Store online, you should definitely buy through Ebates and save extra money.

I also bought these mini Mead notebooks for the kids to use as autograph books.  I didn't think it was necessary to spend over $7.00 each for autograph books, so I picked these books up for less than $1.50 each and have some Disney stickers that the kids can use to decorate them.  The kids will still have their Disney autograph books, just for a heck-of-a-lot cheaper!

 

 

 

 

 

 

 

 Anyone who has ever been to Disney World or Disney Land knows that there are tons of shops and kiosks all around the park with any type of Disney themed mercherchandise you could possibly every dream of.  It's inevitable that I'm going to get suckered in and buy some souvenirs for my kids.  The stuff is so darn cute.  But, I found some Disney themed goodies for the kids that will help curb my urge to shop.  The Disney silly bands I saw while checking out at the grocery store - they were $1.00.  And, Dollar Tree had these cute Mickey Mouse watches and Disney Pez Dispensers - also $1.00 each.

I still have to buy some cheap rain ponchos.  But, other than that, I think I'm done.  Do you have any suggestions?  I feel like I have a good grasp on it, but I'm sure I am missing something.

So, he would be SO jealous if he knew Frugal Philly Mom and her family got to go to the studio and check out the set of The Sunny Side Up Show in Philadelphia, which she blogged recently.

Make a Free Planter at Home Depot - Free Fun in Austin - Looking for a fun, free activity this weekend? On Saturday, April 2nd from 9am to Noon, you can take your kids to your local Home Depot for free workshop to build a planter.  I know that the Lowe's workshop make you register in advance, but I don't think you need to do that for Home Depot.  Just call your local Home Depot store to confirm that they are having this event.

Bubble Bubble, It's No Trouble - My 3 year old has just as much fun dumping the bubbles as blowing them.  But, Sounds Fun Mom gives us the scoop on how to make home-made bubbles with a corn syrup based recipe. This might be a less expensive and easier alternative than buying new bubbles every week at the store.

A few of my favorite things about Easter

Throughout childhood, Easter always meant: morning church, chocolate eggs, pretty dresses, traditional Polish food, and a trip to the Easter Bunny. It really is a wonderful holiday. It's a time to come together with family and enjoy each other.  After months of snow-covered grass and cold winter days, we can finally start to get outside and experience nature again.  The birds are chirping, the flowers are blooming and everyone seems to be in a good mood.  Everything appears to be falling into place.

As a Mom, things that make your kids happy definitely make you happy too.  And, if you ask my kids what their favorite part of Easter is, they would both agree that it's the Easter egg hunts.  Last year we went to more Easter egg hunts than I can count.  It was actually almost embarrassing how many we went to.  But, the kids absolutely adore the egg hunts, and they seem to be plentiful in our area, so why not?

By far, the best egg hunt we experienced was near my parent's house.  There was hay scattered all over and the eggs were hidden throughout the hay.  This definitely added a element of fun.  Typically, the eggs are just scattered on the grass, and they are gone within seconds.  But, not with hay!  You really have to look and sometimes dig in order to get these eggs.  It was so much fun for my son, and my mom and I had a blast cheering him on.

Besides the Easter egg hunts, clearly, another favorite part of Easter is the chocolate.  I'm a chocolate lover (which you already know if you've read this post.)  So, Easter is a great excuse to indulge a little and have some chocolate in the house.

Also, I love the fact that Easter is an fun, easy holiday!  For many families, other holidays, such as Christmas, can be the source of drama.  People are squabbling over which of the in-laws to visit, the budget and getting everything checked off of the massive to-do list.  But, that never seems to be the case with the Easter holiday.  Parents can always agree what to fill the Easter basket up with.  Visits with the extended family are typically drama free.  And, everyone is excited that the spring weather is here and summer is just around the corner.  People are generally happy.  That is definitely one of my favorite things about Easter.

Have Fun in the Sun, but don't forget those sunglasses

I think I'm going to surprise you with a fact about parents.  Every mom I know wants to  keep their kids happy, safe and healthy.  We bundle them up in the cold winter weather, and at the beach, we slather on the spf 50 sunscreen. That's no surprise. But, according to the American Academy of Ophthalmology, while 82% of parents encourage their children to use sunscreen to protect their kids' skin, only 32% of parents protect the vulnerable eyes of their infants, toddlers and children with sunglasses.  This just doesn't make sense.  We obsess over the sun block to protect our kid's skin, but shouldn't their eyes be a top priority too?

Eye conditions such as cataracts and macular degeneration may be prevented by properly protecting your child's eyes now. The American Academy of Pediatrics says that children are at an increased risk for permanent retinal damage from sunlight until they’re about 10 years old

If your kids aren't used to wearing sunglasses, they may resist it in the beginning, but eventually it will become second nature.   Encourage them to wear their sunglasses whenever they're outside and allow them to follow your lead!  This is a simple step we can take to protect our childrens' precious vision for years to come. 

Keep in mind - Toy sunglasses don't count.  Find glasses with lenses that provide 100 percent UV protection. You'll want to find Sunglasses that cover the entire eye area which helps to keep sun from sneaking in on the sides.

Making Lemon Water with Kids

A couple of days ago my husband and I were listening to a commercial on the radio.  We both stopped our conversation and just listened.  I guess it was more of a public service announcement vs. a commercial.  The topic was childhood obesity and they really shocked us with some facts about kids and sugar.  The amount of sugar and calories that some kids drink is surprising. 

My 5 year old takes after me. He really loves good food and enjoys savoring the flavors of whatever he eats or drinks.  And, just like me, his drink of choice is definitely water, and that couldn't make me happier.

This past weekend, he was playing in the backyard and took a break to make 'lemonade'.  His version of lemonade is really just water and lemon - no sugar or sweetener.  But, as we were making 'lemonade' together, I realized that is was a great experience for both of us. 

Seeing it though his eyes was really exciting. We washed the lemon and rolled it around in our hands to loosen up the juices. I cut the lemon and he squeezed it into the pitcher. We threw all of the peices of lemon into the pitcher of water. Then, he helped pour glasses of lemonade for the whole family, and, with such pride, he handed his bother and Daddy a refreshing cup of 'lemonade'. 

It was just lemon water, but it was so much more than that.

Making Mealtime Fun with Goldfish Sandwich Bread

There are so many picky eaters out there and, recently, my three year old has been much more picky than usual.  A lot of my friends struggle with their kids' diet and they are always super happy about something that will entice their little ones to sit down and eat. 

It was actually my Mom who told me about this new Goldfish Sandwich Bread from Peppridge Farm.  It's crust-less bread in the shape of a smiling goldfish.  It is too cute!

My son and nephew loved eating goldfish sandwiches at their Grandparent's house. The bread itself is soft and thin so it's perfect for peanut butter and jelly or cheese.  (If you've ever had the Pepperidge Farm Deli Flats, the Goldfish Bread is similar to those).  Health-conscious moms like me won't feel guilty eating it because it's only 120 calories per serving & contains 3g of fiber per serving. Plus, it's a good source of calcium, and contains no high fructose corn syrup.  I was happy to see that they offer a wheat version in addition to the white.

My older son would love to take this to school in his lunch box, and it would also be a hit at a kid's birthday party or picnic.   It's a sandwich that smiles at you.  How sweet!

How to make a fun spring breakfast for your kids: Egg & Potato Bird nests

Spring is almost here and we are so excited for long days of playing outside again!

Here is a very easy way to celebrate Spring with breakfast.  I made home-made hash browns by shredding potatoes and some onion, salt and pepper.  Then, I fried it on the stove top until it was browned and thoroughly cooked.   When the hash browns were almost done, I whipped up 3 eggs,  poured the mixture into a frying pan and cooked it until it was done.  Then, I transferred the egg mixture onto a plate and used my egg shaped cookie cutters from William Sonoma to cut out little eggs. 

Once everything is ready, just make your hash brown birds nest and place your eggs in the middle.  I think they look so cute!

A Leprechaun Came to Visit - St. Patricks Day Kid's Fun!

I knew about the magic of the Easter Bunny and Santa Claus, but until recently, I never realized the hype surrounding the magic & mystery of the Leprechaun.  

Maybe, as a parent, you don't want to add any more fantasy characters to your child's world.  But, if you're up for a little fun, there are some easy ways to celebrate St. Patricks Day.   Here's one idea...

After the kids are in bed, you will have to leave a small treat for your child where they can easily find it.  Then, sprinkle a small trail of green or gold glitter toward the bathroom.  Tell the kids that the Leprechaun left them a treat for being so well- behaved recently.  

And, the Leprechaun left evidence that he was in your house!  He used your toilet, but didn't flush because he didn't want to wake anyone up in the middle of the night.  Add a little green food coloring to clean toilet water.   When you're kids wake up in the morning, they will see that the Leprechaun came to visit!
